Recipe: Peanut Butter Energy Bars

Searching for new healthy alternatives to sugar laden snacks that satisfy your sweet tooth?

It’s all too easy to get lost in the wealth of ‘new’ healthy ingredients that cost a small fortune.

Instead of getting caught up in the glitz and glamour of Charcoal Powder and Spirulina, let's get back to basics.

After all, simplicity is the over looked route to real health, so why complicate matters?

Prep Time:    2 hours, including setting time                      

Cooking Time:    N/A

Ingredients:

1 Cup Dates

3/4 Cup Jumbo Oats

2 Tbsp. Peanut Butter - I used Meridian Smooth Peanut Butter

Line a small baking tray or large Tupperware box with baking paper.

Use a standard sized cup to make your measurements for the Dates and Jumbo Oats.

Add all the ingredients into a food blender or Nutribullet style blender.

Pulse the ingredients in around 20 second burst, stopping occasionally to remove the lid and mix the ingredients up so they don’t clog up the mixing blade.

When you have a mixture that keeps itself together and has incorporated all the dates and oats remove from the blender.

Spoon out your mixture into the lined baking tray or Tupperware box.

Using the back of your spoon press down the mixture into the corners of the container creating a smooth and even surface.

Place your container in the fridge and leave for around 2 hours.

When ready remove from the fridge.

Lift out the mixture using the baking paper edges and place on a chopping board.

Slice up into rectangular shaped bars. The mixture should make approx. 8 bars.

Wrap your bars in cling film or store in the fridge in a Tupperware box. They will last for around 4-5 days whilst keeping their consistency.
