Recipe: Salmon Burger with Green Bean Quinoa

#TeamTCUK's nutritionist and founder of RealFoodFunc, Jon Hodgkinson, has devised this recipe for delicious salmon burgers with green bean quinoa - the perfect mix of protein and carbs to refuel you after a long ride or run.
Preparation time: 15 minutes (set in fridge for 20 minutes)
Cooking time: 20 minutes
Ingredients:
- 2-3 Salmon Fillets
- 2 Large Sweet Potatoes
- 1 Red Onion
- Handful of Coriander
- Thumb-sized piece Ginger
- 1/4 cup Quinoa (Per Person Per Portion)
- 1 Organic Chicken Or Vegetable Stock Cube
- Handful Green Beans (Per Person Per Portion)
- 1½ tbsps Olive Oil
- 1 tbsp Natural Yoghurt per person to serve
- Lemon to serve
- 1 Handful Fresh Coriander

- 2 Large Sweet Potatoes – chop into cubes keeping the skins on and put on to boil until soft (around 8-10 minutes)
- 2 Salmon fillets skinned – cut into small pieces take care not to break up too much – finely chop 1 red onion and large handful of Coriander, 1 thumb-sized piece Ginger finely chopped, 1 tbsp Olive Oil. Mash the sweet potato and mix all ingredients together.
- Form into patties (around 10) by taking a palm sized portion of the mixture and shaping in your hands, place on greaseproof paper and leave to set in fridge for 20 minutes.
Image - Set your oven to180 degrees Celsius if cooking burgers this way (read on to see alternative method.)
- Finely slice the green beans. Top tip: do enough to create meals for the coming days too.
- Rinse the Quinoa and add to a pan with enough water to cover by around 1cm along with the stock cube – bring to boil then simmer for around 15-18 minutes ensuring you mix to break up the stock cube.
- Place your Salmon Burgers in the oven on 180oC for around 15-18 minutes, turn after 10 minutes.
- Place your finely sliced green beans into a steamer and cook for around 10 minutes. •
- Alternatively add Coconut Oil to large frying pan – place Salmon Burgers in and cook on both sides until lightly browned, this method may cause the burgers to break up.
- When cooked serve with Natural yoghurt and squeeze of lemon.
- Add flavor to the Quinoa by mixing through a handful of fresh chopped coriander before serving.
